Cheesy Stars
I don't think I've ever blogged about a savory dish. Well, making savory meals is quite uncommon for me since I'm a dessert kind of girl. But to ease in to the subject of 'savory', this recipe I've made are still cookies and still involves baking. The real name of the recipe is 'Cheesy Feet', made with cookie cutter shaped like feet, but as you can see, I opted for stars and moons because cheesy feet sounds … well … disgusting. These crackers are eaten at dinnertime, rather than lunch. They make for a nice, cheesy side dish with a spicy dinner. And although the recipe did not specify it, I really recommend adding ½ teaspoon salt to the dough, to intensify the saltiness of these crackers. Rating: 3.5 out of 5.
Cheesy Stars recipe: Nigella Lawson - Feast 'Cheesy Feet'
Ingredients:
- 1 ½ cups Cheddar cheese, grated (100g)
- 1 ½ tablespoons soft butter (25g)
- ⅓ cup all-purpose flour (50g)
- ¼ teaspoon baking powder
Instructions:
- Preheat the oven to 400ºF.
- Put all of the ingredients into a food processor and blitz until the dough comes together. Just be patient: it will happen, I promise you. (I had to add 2 tablespoons of milk to make the dough come together) Form into a flat disc, wrap in plastic wrap and let it rest for 15 minutes.
- Roll out the dough on a floury surface to roughly ⅛ inch thickness, and cut out your feet (or stars, in my case) with your cutters. You can keep re-rolling the dough and cutting out feet until it is all used up.
- Put them on to a lined baking sheet and cook in the oven for 10 minutes for the smaller feet, and 12 minutes for the bigger feet (my stars needed about 8 minutes). The biscuits will continue to crisp up as they cool on a rack, so take them out when they’re still a little soft in the middle.
Cheddar cheese, already greated; Nigella says cheese taste best, when it's freshly grated, but I couldn't be bothered doing that. Grating is one of my least favorite kitchen activities.
They did puff up a bit, but I've checked some other blogs who made them and they had the same thing.
Yum-O!
I ate these with soft tacos.
These savory crackers go along great with ketchup or mustard dill.
