Rocky Road Bars ... My Way!

After the somewhat disappointing Rocky Road Fudge Bars I made two weeks ago, I longed to make a rocky road again ... and so I did this morning. But this time, I did it right! And by doing it right, I mean no obscure, but a good ol' trusted recipe from the domestic goddess herself: Nigella Lawson. This is actually my favorite rocky road recipe, heavily adapted with my own additions. If you remember, I blogged about this recipe back in August last year. Well I've made it a few times since, and now I've come up with the ultimate rocky road bar! Mini-marshmallows + rice krispies + white chocolate crunch bars = rocky road perfection.

Rocky Road Bars recipe: adapted from Nigella Lawson's Rocky Road Crunch Bars

- 1 stick + 1 tablespoon soft unsalted butter
- 10 ounces semisweet chocolate, broken into pieces
- 3 tablespoons golden syrup or ¼ cup corn syrup
- ¾ cup rice krispies cereal
- ¼ cup plain hard and crunchy cookies
- 1 ½ cups mini marshmallows
- 1 ounce white chocolate crunch bar, broken into pieces
- 2 teaspoons powdered sugar

- Melt the butter, semisweet chocolate and syrup in a heavy based saucepan. Scoop out about ½ cup of this melted mixture and put aside. (remember that melted chocolate sets fast)
- Put the cookies into a freezer bag and then bash them with a rolling pin. You are looking for both crumbs and pieces of cookies.
- Fold the rice krispies and crushed cookies into the melted chocolate mixture, and then add the marshmallows and white chocolate crunch.
- Pour into a 9-inch square foil tray; flatten as best you can with a spatula. Pour over the reserved ½ half cup of melted chocolate mixture and smooth the top.
- Refrigerate for about 2 hours or overnight.
- Cut into 24 fingers and dust with powdered sugar by pushing it gently through a tea strainer or small sieve.

What a lovely way to start my Monday: melted chocolate, mini marshmallows, rice krispies and white chocolate crunch. Hello breakfast!

Nigella suggests topping the rocky road bars with icing sugar to make them look better.

Because, let’s be honest – rocky road never have been the prettiest candy sort.

But they sure are the tastiest!

I love rocky roads, I remember Nigella doing these but haven't tried them at home myself. I like them best if there is a mix of coloured marshmallows.

so lovely and simple. I think the white chocolate crunch is such a good idea. i'm definitely finding myself more and more time to bake all sorts of delicious stuff and this one is definitely worth trying.
