Vanishing Oatmeal Raisin Cookies

Though oatmeal cookies have always been my favorite kind, I’ve never (up till now) actually baked them from scratch. Yesterday I bought a jar of Quaker Oats® and I spotted a recipe on the back of the lid. I always love how American manufacturers think of placing a recipe on the inside of their products. So well thought of! The recipe is called ‘Vanishing Oatmeal Raisin Cookies’. I believe the ‘vanishing’-part refers to the fact that these cookies are so good they’ll be gone within hours. That’s exactly what happened in my house; I baked them this morning and in the late afternoon they were ‘vanished’! Rating: 5 out of 5.

Vanishing Oatmeal Raisin Cookies recipe: Quaker Oats®

Ingredients:
- ½ pound (2 sticks) margarine or butter, softened
- 1 cup firmly packed brown sugar
- ½ granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt (optional)
- 3 cups rolled oats (quick or old fashioned, uncooked)
- 1 cup raisins

Instructions:
- Heat the oven to 350°F.
- Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well.
- Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet. Remove to wire rack.


The oatmeal takes up most of the recipe, so I can delude myself into thinking that these are 'healthy'.

Ladies and gentlemen, may I present to you the magnificent 'Vanishing Oatmeal Raisin Cookies'... vanished within hours!


Update: Because these cookies were gone so quickly, I made another batch last night and tried chocolate chips in stead of raisins: that was delicious too!

Yummy! My go-to oatmeal cookie recipe is this one as well, but I like to soak the raisins (or cranberries or cherries) in rum for at least an hour to give them extra oomph :).

If you can get your hands on some butterscotch chips, I definitely recommend trying out the combination. I really really can't resist an oatmeal cookie. Soo good.
