Banana Blueberry Muffins


So I had these bananas in my kitchen that were so ripe, the skin literally peeled off. With ripe bananas, you have two obvious choices: 1. banana bread, or 2. banana muffins for breakfast. Since breakfast is my favorite meal of the day, I went with the latter. I also had some blueberries that I was saving for blueberry buttermilk pancakes (instead I made buttermilk Nutella pancakes, better right?). I found this great recipe with amazing reviews so I went at it! It's not really a typical muffin-recipe because it requires quite some sugar and butter, but that made them really delicious. I put them into the oven right before eating, so they are always warm.

Banana Blueberry Muffins: GeniusKitchen

Ingredients:
- 3 large ripe bananas
- 3/4 cup sugar
- 1 egg, slightly beaten
- 1/3 cup melted butter
- 1 cup blueberries
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour

Instructions:
- Mash bananas in a large mixing bowl. Add sugar and egg. Combine dry ingredients and gently stir into banana mixture.
- Pour into a 12 well-greased muffin cups.
- Bake at 375 for 20 minutes.
