Autumn Spiced Apple Tartlets

Happy Thanksgiving to all who celebrate it! I don't. Sadly enough. There isn't a more warming thought than all of the family coming together, cooking all day, making a glorious turkey, cranberry sauce, candid yams... yummmm! And without the commercialism from Christmas. Yes, I would love it if we celebrated it across the pond :) But for now, I console myself with these rustic beauties. They're warm, individual-sized and super amazing! I used my secret combination of spices (though not-so-secret anymore) to make them taste like an authentic Dutch apple recipe! Rating: 5- out of 5.




Autumn Spiced Apple Tartlets:

Ingredients:
- puff pastry, thawed, cut in squares
- 2 to 3 Granny Smith apples, cut in cubes
- 1 tablespoon lemon juice
- 5 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- pinch of ground ginger
- pinch of ground allspice
- pinch of ground nutmeg
- 1 egg + 1 teaspoon white sugar, for eggwash

Instructions:
- Preheat the oven to 400F/200C.
- Put the apple cubes in a large bowl and splash the lemon juice over the apples so they won't turn brown. Add the sugar and spices and combine everything with a wooden spoon. Mix well.
- Place the thawed, puff pastry squares on a parchement-lined baking sheet. In a small bowl, beat the egg with the teaspoon of sugar. Brush the edges of the puff pastry a bit with the eggwash, using your fingers or a pastry brush.
- Place two tablespoons of apple mixture on the center of each puff pastry square. Take the sides of the pastry and form it roughly into a circle. Repeat with the remaining squares.
- Place the baking sheet in the oven and bake for 20-25 minutes, depending on the size.
- Cool the apple tartlets till they're warm and serve. Enjoy!
