New York Cheesecake

As I mentioned recently, my family loves cheesecakes! Actually, love would be an understatement. I can’t even say the word ‘dessert’ without my brother pleading to make another cheesecake. So it came as no surprise that on my brother’s birthday I would bake cheesecakes all morning. I baked a London Cheesecake and a New York Cheesecake. I found this recipe on AllRecipes.com. It is one of the highest rated recipes they have and I decided to give it a try. This recipe makes for a very thick cheesecake. You need 4 packages, 32 ounces, of cream cheese, and while baking the cheesecake almost popped out of the pan! Nevertheless, the cheesecake tasted fantastic! 5 out of 5.

Chantal's New York Cheesecake recipe: AllRecipes.com

Ingredients:
- 15 graham crackers, crushed
- 2 tablespoons butter, melted (I needed a lot more, about 6 tablespoons)
- 32 ounces cream cheese
- 1 ½ cups white sugar
- ¾ cup milk
- 4 eggs
- 1 cup sour cream
- 1 tablespoon vanilla extract
- ¼ cup all-purpose flour

Instructions:
- Preheat oven to 350 degrees F. Grease a 9 inch springform pan.
- In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
- In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
- Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

The cheesecake, post-oven. What's a birthday party without balloons?

Sorry if the red cherry topping hurts your eyes. My camera always makes red look ridiculously red. This picture is not photoshopped, I swear!

Very creamy and light! I predict this cheesecake will not last long.

I'm planning on making this today...but in your recipe you say nothing about your strawberries and cherry topping- how did you make it??

Oh I just used an ordinary cherry pie filling (pre-bought).

Hope you like the cheesecake! It wasn't the prettiest cheesecake I ever made, but definitely the tastiest!

Make sure your pan is quite large, during baking my cheesecake popped out so high! (or think about dividing the recipe in 3/4)

how did you evenly spread the cherry topping without disturbing the cheesecake layers?

@Anonymous: If the cheesecake has been baked long enough, the top will be set, so it's not really difficult to spread a topping on it then. Just be gentle.
